I am a creature of habit when it comes to food. That is, until I’m not. I generally choose a food and will eat it every day until I run it into the ground and never want to see it again. What, you don’t do that? I distinctly remember my 10-year running breakfast kick where I ate cereal, yogurt, and cranberry juice every.single.morning. I don’t remember the kind of cereal, but rest assured it was the same for 10 years 🙂
Ever since changing my diet almost 2 years ago, I have been eating the same thing for breakfast and lunch almost every single day. If it ain’t broke and all that I suppose. But recently I’ve found myself falling out of love with my beloved grilled chicken lunch salad. I blame the cold weather. And the lack of fresh garden veggies. But for whatever reason, I think I need to move on from salads (at least until spring…gasp).
So the next question becomes – what am I going to replace it with? I am looking for a way to keep my current mix of protein, fat, and carbs. So maybe some type of rice and beef dish? Something I can make a large batch of on a Sunday and reheat throughout the week. If you guys have any ideas, please feel free to throw them my way! I am always up for trying something new. So with all of that, I thought it would be fun to look back on some of my recent meals and talk about the “why” behind my choices. Sounds kind of nutty, but any food-related talk really is my love language 🙂
This meal was one of those “I just walked in from the gym and I am starving and don’t really care what I eat as long as it’s high in protein and carbs” kind of meals. Luckily we had some leftovers from Christmas, so I grabbed 6 BBQ meatballs and a huge helping of mashed potatoes. Come to think of it, I might have even eaten these cold. Apparently 2 minutes in the microwave would have really sent me over the edge to starvation 🙂 And I added the leftover Costco chopped salad for good measure (and to say I ate a few veggies with dinner).
This was a lunch I enjoyed after Christmas when my mom brought me over a huge container of split pea soup. She knows the way to my heart for sure! She only makes this once a year, and my dad and I are obsessed and fight over every last drop. I begrudgingly ate my chicken salad as well, which tasted nowhere NEAR as good as the soup. Now the countdown is on for next year when she makes it again (unless I find a ham bone laying around somewhere)…
This was one of last week’s lunches when I went home absolutely STARVING and knew eating a salad just wasn’t going to cut it. So I went back to my childhood roots and chose an almond butter and jelly sandwich on Dave’s Killer bread (I buy this in a two-pack at Costco and we all love it). On the side I added two different kinds of chips, sliced up cucumbers with salt, and my homemade applesauce. And in the spirit of my New Year’s goals – I read my book instead of zoning out on my phone. #winning
Another post-workout meal. And as you can see, I didn’t even attempt to add a vegetable. I was all about the burger and fries that night. Nathan and the kids had this meal earlier in the evening, so I just put the burger and fries on a pan under the broiler for a few minutes to get some good crispiness to the fries. There is nothing worse than soggy fries in my opinion 🙂
