Happy Memorial Day! We are currently away camping for the long weekend, not heading back until later today. I will have a full recap of our camping trip up on the blog later this week. I’m also planning on dedicating a post to food prepping for a camping trip (or any vacation really). I hope you guys are enjoying your weekend and the official kick-off to summer. Wahoo!
That being said, it’s time for another edition of my Recent Eats (part 1, part 2, part 3, part 4, and part 5). I love these posts (although I always start getting so hungry whenever I look back at all these delicious meals). Enjoy!
Most weeks I sneak in a lunch trip to Panera to mix things up. Although I still always get a salad there, for some reason they taste SO MUCH BETTER when someone else makes them. This is their fuji apple chicken salad (my favorite) with a side of bread and butter, lemon water, and the latest Jodi Picoult book. Nothing better in my opinion then zoning out with a good book and a yummy salad.
On my list of meals I could eat everyday and not get tired of is a burrito bowl from Chipotle. We took the kids to see Made in China last weekend, and afterwards made a stop at Chipotle for dinner. This was absolute heaven, especially with a side of guacamole and chips (their guac is seriously the best!) Our kids absolutely love Chipotle as well (raise ’em right!)
This was a recent weeknight dinner, and it was so seriously delicious (and easy since I had the meal prepping done ahead of time). This was ground turkey mixed with peppers, onions, and garlic served over rice noodles. Peanut sauce on top (along with crushed cashews I added after I snapped the picture). Perfection!
This plate was from my sister’s baby sprinkle. The wraps were from Costco, and were really good! Along with a tortellini salad, fruit, and my mom’s amazing ramen noodle salad. Not pictured: about a million chips with guacamole, shrimp, and veggies and dip. Plus an epic piece of cake for dessert. When in Rome, right?
Carvel birthday cake for my niece’s birthday last week. Graham didn’t realize it was ice cream cake until he took his first bite. To say he was excited is the understatement of the year. Anyone else have Carvel cakes as a kid? I always remember going to Carvel with my mom to pick up my birthday cake, and they would always give me a free ice cream cone. So fun!
I know I’m probably the last person to jump on the “burrito bowl” bandwagon, but in my defense, I generally get my burrito bowl fix at Chipotle But I digress. Last week I decided I wanted to attempt my own version of a burrito bowl at home and see what the kids thought. Verdict: Graham licked his bowl clean (literally) and declared that he wants every night to be burrito bowl night. Well okay then! Reagan was a bit unimpressed, but I’ll keep trying and hopefully we can persuade her to come over on our side. My bowl contained rice, corn, chicken, black beans, and the trio of happiness: cheese, sour cream, and guacamole. Served with way too many corn chips on the side. This is my happy place.
I ate this dinner after a particularly difficult gym workout. Brown rice, steamed broccoli (I think Nathan cooked it in bacon grease because it tasted REALLY delicious), and turkey meatballs. The sauce is plain greek yogurt mixed with chipotle peppers. Spicy but super yummy! Love this type of meal after a hard workout.
This was dinner last Saturday (cheat night)! We recently discovered that a local organic farm (Profeta Farms) operates a food truck just minutes from our house. Talk about convenient! This was a blue cheese burger with mushrooms, onions, and bacon, along with a side of their ridiculously delicious organic fries. Hit.The.Spot.
