Hi everyone! Happy Friday! Who else is super excited for the weekend? Reagan and I are volunteering at Graham’s field day today, so it’s going to be a busy but fun day. I’m ready to get the weekend started 🙂 Since I seem to have an obsession with food (is this really a bad thing?) I yet again found tons of meal pics on my phone to share. So I guess that means it’s time for another edition of my recent eats (part 1, part 2, part 3, part 4, part 5, and part 6). Feel free to play along in the comments and share what you’ve been eating.
This was a recent weeknight dinner (which is quickly becoming one of my favorites because it’s so easy and delicious). Rice noodles, spaghetti with meat sauce, and a huge pile of grilled broccoli. My trick to making delicious meat sauce – start with 2 cans of sauce (I always check the ingredient list to make sure it’s all things I recognize and no added sugar). Then I add a can of fire roasted diced tomatoes, along with garlic powder, onion powder, and oregano. And my secret weapon spice – crushed red pepper. It doesn’t make it spicy at all (unless you use too much) and it really brings out the flavor in the sauce. I put this in the crockpot with 2 pounds of ground beef and let it simmer all day. Nathan and the kids always rave about it.
This was a meal where food prepping really came in handy. I made the black bean and corn salad on Sunday, so that was ready to go. I made everyone a cheese quesadilla along with homemade guac (which is really just smashed avocado with lime juice and salt). Not pictured – enough tortilla chips to give me a stomach ache. That’s one thing I can’t keep in the house – I have NO willpower around chips of any kind (especially corn chips). This meal was lacking protein, but it sure tasted delicious!
No, I didn’t eat all of this food (but probably could have if given enough time)! This was my Panera birthday lunch with my mom, dad, and sister. Anyone who knows me knows I LOVE Panera! I just think they have such great options, and I love that the kiosk ordering allows you to customize your meal. I always add lots of extra goodies to my salads (kale, wonton strips, and whatever veggies don’t come standard) and almost always add extra chicken to bulk it up. Yum!
Weekday lunch. Salad with half an avocado, grilled chicken, and leftover sweet potatoes. With a side of Naan bread with butter (Costco impulse buy) and strawberries from our garden.
Recent weeknight dinner. Chicken tortilla served over rice and a side of chips and guacamole. I’m telling you, I can’t control myself around tortilla chips. Although in my defense, this dinner was consumed on a gym night where I was FAMISHED by the time I sat down to eat.
This was my dinner on Memorial Day. We invited my parents over for burgers and fries, and my mom brought a salad and deviled eggs. Yes, there is a burger under that heap of grilled onions. I firmly believe grilled onions take any burger to the next level. And I’ve gotten pretty good at making my own sweet potato fries. I recently read that if you soak the fries in water for 30-60 minutes before baking, they turn out crispier. Anyone try this before? I’m intrigued…
Date night dinner! Nathan and I chose a local Mexican and Peruvian restaurant that we really enjoy. Although we have yet to branch out into the Peruvian side, and stick with fajitas. Any recommendations on things we should try?
Beans, rice, and flour tortillas. I can’t get enough of the beans at Mexican restaurants. I have no clue what they add to them (and probably don’t want to know) but they are so delicious!
Fajitas! Chicken, steak, shrimp, and peppers and onions in this amazing sauce. With a side of sour cream and guacamole of course. I couldn’t finish it all, but you better believe I ate the leftovers for lunch the next day. Still amazing!
