Things I’m Loving Lately – Food Style

Hey guys!  Happy Friday!  Just jumping on here real quick to share some fun things I am loving lately, food style.  Feel free to share something you are loving lately in the comments 🙂

My new crockpot from Costco (where else?)!  I got my original crockpot in 2000 when I moved into my first apartment during college (my aunt gave it to me).  That bugger has been going strong ever since, and I have to admit I shed more than one tear when it finally gave up (although that quickly went away once I realized I could buy a way sleeker looking one with timer feature and warm setting.  Another thing I am loving lately – prepping dinner when I go home at lunch!  I browned 2lbs of ground beef and added that to my crockpot along with some homemade canned sauce, fire roasted diced tomatoes, and lots of other seasonings.  Dinner is served!

We first discovered brown rice pasta when we dabbled in gluten-free eating years ago.  And while we don’t eat exclusively gluten-free these days, we still enjoy brown rice pasta.  And I love that it now comes in fun shapes as well.  When I tell the kids we are eating “spirals” for dinner, their eyes light up.

We were “grilled chicken on our lunch salads” kind of people for YEARS, and just recently discovered the awesomeness of whole organic chickens.  We have a method now were we bake 2 in the oven every Sunday, and we have chicken for our lunches for the week.  Nathan may never go back to grilled chicken again…

Roasted pumpkin seeds.  I know this is really just a once-a-year thing, but man are they delicious!  We carved 2 pumpkins right before Halloween, and the kids and I had so much fun separating the “gunk” from the seeds.  Once they were clean I coated them in butter and salt and baked them for 40 minutes.  The verdict – we are all OBSESSED!

I know this isn’t food you are supposed to actually EAT (but you could I suppose).  My first experience with making my own skin care products.  This facial scrub is made up of 3 tablespoons of coffee grounds, 1 tablespoon brown sugar, 1 tablespoon raw honey, and enough olive oil to make it spreadable.  I used this the other night on my face after washing it.  I just wet my face, gently massaged the scrub into my face for about a minute, then let it sit for another few minutes.  Then I wiped it off with a warm washcloth.  It left my face feeling very soft and moisturized, and I’m think I’m going to add it into my regular rotation.  Warning: the coffee grounds are MESSY!

Over the summer I started making my own salad dressing (prior to this we would just pour some olive oil and apple cider vinegar on our salads).  Well, it’s safe to say we are in love.  I have been using this recipe, and I normally double it so it lasts us about 2 weeks.  I just use one of our protein shaker bottles, and the wire thing in there does a great job at mixing it up each time.  When our garden was overflowing with oregano we used that in there as well, which really took it to the next level.  My goal next summer is to figure out how to preserve some of the fresh herbs from the garden.  Suggestions welcome!

Random snack before the gym last week, but it hit the spot.  Rice caked spread with almond butter and some chocolate chips – because everything tastes better with chocolate, right?!

Nacho night!  Even though we are very into Taco Tuesday, I decided to mix things up a bit and get wild and crazy with nachos.  Although I left them in a bit too long, they were still delicious (in my opinion).  Reagan scarfed hers up, but Graham was a bit more skeptical (he said he didn’t like the combination of black olives and cheese?)  Although he left not a morsel on his plate so I guess he didn’t hate it TOO much…

Okay, with that I am signing off.  Reagan and I have a ton of things to do today.  We are heading to visit my sister and 2 nephews right after we drop Graham off at the bus stop.  We also need to do our weekly Costco run, plus see if Walmart carries Moana (we want to watch this for family movie night on Saturday).  Plus I have mountains of laundry to put away and floors to vacuum and mop.  I have a feeling we both will be crashing early tonight…
